No.  You cannot run Logger Pro or Graphical Analysis and use an Arduino as the data collection device, but you can use any of these devices to do that:

With Graphical Analysis or Graphical Analysis Pro, you can use

LabQuest, LabQuest 2, LabQuest 3 (LABQ3), LabQuest Mini (LQ-MINI), Go!Link (GO-LINK), Go!Temp (GO-TEMP), Go! Motion (GO-MOT).

With Logger Pro, you can even use an old LabPro.

We think of an Arduino as a very different thing from these devices listed above. An Arduino is for doing projects and teaching programming; the other devices are lab interfaces, designed for collecting and graphing data.
